This week's recipe of a vegetarian meal would be the first for all of the students. The thought of eating a meal that consisted of vegetables and no meat was not appealing. As we read the ingredients and instructions for preparing the Cauliflower Fried Rice and Cucumber Salad the students became more restless. They didn't like cauliflower. "How can you have fried rice without rice," Leaha stated. The concept of grating the cauliflower and using it in place of rice wasn't helping any. To be honest I wasn't a fan of cauliflower either.

Although they weren't thrilled with the menu, preparing the meal went well.The students eagerly chopped, grated and stirred. They all wanted to actively be involved. The salad was the most favored of the two recipes. The students didn't mind the egg as the protein in the cauliflower "fried rice" but felt it could be improved by adding more seasonings and chicken. Surprisingly our two guests, Marlene Olshan CEO of Vetri Community Partnership, and Elisa Juarez of The Target Foundation, and I enjoyed the Cauliflower Fried Rice.
