Healthy family recipe: Grilled pineapple
Don't forget to grill fruit for dessert next time you barbecue!
With warmer weather upon us, it's time to start heading out the grill again! One of my favorite things to (have my husband) grill is pineapple. It brings out the pineapple's sweetness while giving it a carmelized char.The original recipe calls for dipping both sides of the pineapple in the sugar, but I sprinkle it on to use less sugar. Grilled Pineapple
Ingredients:
1 ripe pineapple
1 can (14 ounces) unsweetened coconut milk (unsalted butter can also be used)
1 1/2 cups turbinado or granulated sugar (This is how much you would need if you plan to dip the pineapple on both sides)
1 teaspoon of ground cinnamon
Directions:
1. Set up your charcoal or gas grill to high heat
2. Peel, slice, and core the pineapple. Here's a video on how to cut pineapple rings. The rings should be 1/2 inch thick.
3. Shake up the can of coconut milk and pour into a wide, shallow bowl. Mix the sugar and cinnamon in another bowl.
4. When you're ready to cook, brush oil onto your grill grate. Dip each pineapple slice first into the coconut milk. Place on a plate to gently spinkle both sides with sugar and cinnamon mixture.
5. Place on grill for about 4 to 6 minutes for each side. (If you would like a crosshatch of grill marks, rotate each slice 60 degrees afer 2 or 3 minutes on each side.)
