Age: 47 From: South Philly Now: South Philly School: A graduate of St. Monica's and St. John Neumann, he went to Temple, for a while. He explained: "I had a bad temper and got kicked out. I should've been a judge or a lawyer." Watch for: His dramatic scene atop the Ritz-Carlton hotel, face-to-face with Billy Penn (and Chef Gordon Ramsay). Dinner: Ramsay made over the family's menu, but DeFino's favorite dishes remain the classics, veal Francese and sautéed branzino. "My seafood, every day I pick it out fresh." And a show: Friday night, he'll set up a TV and host 30-40 golf buddies for a viewing party. Remaining tables will be open for guests. He plans to work while "Kitchen Nightmares" airs. "I'm a little wary of watching. I kinda lived it." The takeaway: "I hope people realize it was a show. I don't know what they're gonna put in it, what they're gonna edit . . . but in the long run, Gordon Ramsay is a dynamite guy."
