I hear so much conflicting information about carbohydrates that I’m not sure what to eat anymore.

Q: I hear so much conflicting information about carbohydrates that I'm not sure what to eat anymore. What do you suggest?

A: When it comes to carbohydrates you want to avoid processed carbs and stick with whole grains, fresh vegetables and fresh fruit. For example, brown rice is a better choice over white rice because it has not been processed (bran removed, bleached and polished). Because brown rice is unrefined, it has more fiber, nutrients and vitamins (potassium, calcium, magnesium, thiamine). Brown rice also has a low glycemic index and is helpful if you are diabetic or trying to shed a few pounds. Sadly, there is little benefit to eating "enriched" white rice, which has essentially been stripped of nutritional value. Hope that helps.
