In honor of the pioneering San Francisco chef Judy Rodgers, who died this week, Russet (1521 Spruce St.) will offer a four course, $35 menu inspired by her on Friday, Dec. 6.

Russet chefs/owners Andrew and Kristin Wood dined at Rodgers' Zuni Café during their tenure in San Francisco, and take her influential dry-brining technique into account when cooking at Russet.

First course

House-cured coppa; pickled celery root salad

Second course

Savory onion tart; heirloom apple, bacon, farm egg

Third course

Beef and onion gratin; tomato, crispy potato

Fourth course

Apricot plum crostata; gewürztraminer sabayon
