Roasted Eggplant Cubes
Eggplant, small to medium
1 tablespoon of olive oil
1. Pre-heat oven to 425 degrees F.
2. Peel the eggplant and cut into 1-inch cubes.
3. Lay out the cubes on a baking sheet. Add olive oil and toss to coat. You can add seasonings to taste such as pepper, cumin, paprika, basil, and red pepper.
4. Bake the eggplant in the oven on the middle rack for 10 minutes. Remove after time is up and stir the eggplant to make sure it does not burn. Return it to the oven and let it roast for 10-20 minutes longer or until tender.
