For the third location (Tria Taproom), Jon Myerow, David Kwass and Michael McCaulley added an oven for flatbreads and snacks.
The fourth - Tria Fitler Square (2227 Pine St., 215-309-2245), which opened last weekend in the former Dmitri's at 23d and Pine Streets - has a full kitchen for new executive chef Karen Nicolas. In addition to the wine/beer pairings and small plates, she offers medium-sized seafood and pasta dishes, priced mainly in the mid-teens.
Sleek but warm design by Otto Architects and Assimilation Design Lab is easy to see: New windows let you see Fitler Square. It's open for dinner nightly as well as lunchtime through late night on weekends. A weekend brunch menu is in the works.
Going solo
Justino Jimenez left his native Mexico about a dozen years ago with a dream of owning a restaurant. Last week - after years of working in Philadelphia, mainly for Marc Vetri and his crew at Amis and Vetri as recently as two weeks ago - he has made it. Los Jimenez Mexican Cocin replaces a corner deli at Sixth Street and Oregon Avenue in South Philadelphia (2654 S. Sixth St., 267-773-8440). Jimenez specializes in tacos al pastor, for which he marinates and seasons thin slices of pork and cooks them on a spit beneath a sweet pineapple that sweetens the pork and serves them over warm, soft corn tortilla. It's open from 5 p.m. till late Tuesday to Sunday.

Honeygrow, the salad/stir-fry/smoothie specialist, has opened its fourth location, in Cherry Hill's Ellisburg Shopping Center (856-520-8122). It's open daily for lunch and dinner.
Passero's, one of the oldest names in Philly specialty coffee, has opened a shop at the Franklin (834 Chestnut St., 267-318-7074). The space was briefly the Center City outpost of the ill-starred Town Hall Coffee. Passero's has plenty of baked goods, as well as grab-and-go items. Hours are 6:30 a.m. to 5:30 p.m. weekdays.
Transition
Reading Terminal Market regulars should get their farewells in now to Tom Helmsing. The go-to guy for coffee guidance is retiring from the main counter at Old City Coffee, and his last day will be April 27. "I'm getting too old for these massive crowds," said Helmsing, 65, who is just shy of 20 years with the company. He's been in coffee for decades; he worked for Starbucks in Seattle when it was just four stores. Here, he worked for Passero's previously. In his next chapter, he'll spend more time with his first love, theater.
Expansions
Kim Strengari and Marianne Gere, who own Conshohocken's Gypsy Saloon, Stella Blu, and Southern Cross Kitchen, have bought the 34 East in Ambler's stone, century-old Wyndham Hotel (34 E. Butler Ave.). Gypsy Blu, whose menu will include best-of dishes from Stella Blu's and Gypsy Saloon's menus, will get a quick makeover and open in mid-May. Gypsy Blu will have outdoor dining of about 50 seats.
Brothers Adam and Andrew Erace are headed to Fishtown for their third Green Aisle Grocery, as they are taking over a former art gallery at 11 W. Girard Ave., between Front Street and Frankford Avenue and just steps east of Sancho Pistola's. Opening is expected in late May.
This year's Great Chefs Event - the 10th, benefiting Alex's Lemonade Stand Foundation and the Vetri Foundation for Children - will be June 9 at Urban Outfitters. As usual, more than 40 chefs and beverage pros from around the country will set up stations to feed the expected 1,200 people. In a new twist this year, the after-party will be held at the Vetri Family's nearby Lo Spiedo, which will keep all the proceedings at the Navy Yard.
Bad news
Calexico, the New York-based burrito specialist, is being evicted from 1600 South St. the space that was to be its first location here. Owners have not replied to messages seeking comment.
Latin Flavor, the Caribbean cafeteria-style spot that opened in November at 627 South St., has closed.
Last day after 21 years for Chickie's Italian Deli (1014 Federal St.) will be Saturday. Divorce has forced the sale of the hoagie landmark. The city shut down the Philadium, the popular sports bar in a corner rowhouse at 17th Street and Packer Avenue. The Revenue Department says the bar owes nearly $19,000 in taxes, penalty and interest dating to 2011, when the first liens were applied.
