Candied Clementines

Makes approximately 2 half-pint jars 4 cups of water 4 cups of sugar 4-6 clementines, well washed, ends removed, sliced 1/8 inch thick

4-6 clementines, well washed, ends removed, sliced 1/8 inch thick

Grand Marnier or brandy for bottling (optional)

1. In a medium saucepan, add the water and sugar and bring to a boil. Stir to dissolve the sugar. Add the clementine slices and use a plate or lid slightly smaller than the diameter of the saucepan to hold the slices just under the surface while cooking.

2. Reduce heat to a simmer on low heat and cook until the clementines are very soft and the liquid has become syrup. Let cool briefly.

3. Add sliced clementines and syrup to one or two small mason jars. Top with Grand Marnier or other liqueur or brandy if desired.
