11/2 cups old-fashioned oats
1 cup whole-wheat flour
2 teaspoons baking powder
1 teaspoon ground cinnamon
1 teaspoon salt
1/2 cup (packed) light brown sugar
1 cup unsweetened applesauce
2 large eggs
1 teaspoon vanilla extract
3 bananas, cut into coins

1. Preheat oven to 350 degrees F. Lightly coat an 8-by-8-inch baking dish with butter, then line the dish with parchment paper.
2. Whisk together the oats, flour, baking powder, cinnamon, and salt in a large bowl; set aside.
3. In a separate bowl, whisk together the brown sugar, applesauce, eggs, and vanilla. Whisk until the mixture is smooth. Then, slowly stream the melted butter into the brown sugar mixture, whisking constantly until well-blended.
4. Add the chopped bananas to the bowl with the dry ingredients; toss the bananas to cover them evenly with the oatmeal-and-flour mixture.
5. Stir the brown sugar mixture into banana mixture. (The batter will be thick).
6. Spread the batter in the prepared dish. Bake until cake is golden brown and the edges start to pull away from sides of dish, 35-40 minutes. Transfer to a wire rack and let it cool for at least 10 minutes in the dish. Cut into 12 servings.
