Recipe: Energy Truffles


  1. 6 dates, pitted

  2. ½ cup raisins

  3. 2 T. coconut oil

  4. 1 cup walnuts

  5. 3/4 cup unsweetened, shredded coconut

  6. 1/2 cup cocoa powder

  7. 1-2 T. water to thin


  1. In a food processor combine raisins, dates and coconut oil (melted). Add to that the dry ingredients and pulse to form a dough. Add water, as needed to thin it out.

  2. With wet hands, scoop a 1-2 T. heap of batter into hands and roll into a ball. Coat with coconut or chopped nuts or leave as is.

  3. Refrigerate or freeze to firm it up. Enjoy!
