Recipe: Energy Truffles
Ingredients:
6 dates, pitted
½ cup raisins
2 T. coconut oil
1 cup walnuts
3/4 cup unsweetened, shredded coconut
1/2 cup cocoa powder
1-2 T. water to thin
Directions:
In a food processor combine raisins, dates and coconut oil (melted). Add to that the dry ingredients and pulse to form a dough. Add water, as needed to thin it out.
With wet hands, scoop a 1-2 T. heap of batter into hands and roll into a ball. Coat with coconut or chopped nuts or leave as is.
Refrigerate or freeze to firm it up. Enjoy!
