This fancy indie chain — with locations in Center City, Radnor, Marlton and Naples, Florida (?!) — offers upscale takes on traditional Greek favorites. Consider the the horiatiki salad with goat cheese feta, the fish-lavraki (branzino), tsipoura (dorado), fagri (snapper)-butterflied cooked over the coals to minimalist perfection. Traditionally, Greek octopus fishermen tenderize their catch by bashing it against the rocks. Estia makes due with a dedicated washing machine: 15 mins, cold water, no detergent but plenty of salt.
