Menus have changed and chefs have moved on over the past quarter-century, but Ellen Yin and Fork remain the model. Especially in Old City, where the skilled restaurateur and her stylish New American bistro have set the tone for sophisticated but approachable dining. “Providing staff job growth, health insurance, 401k plans, and sourcing local ingredients are initiatives that have been at the core of Fork’s focus on sustainability since its founding, long before they became fashionable,” Craig LaBan wrote in 2022. But the most meaningful gauge of Fork’s value, he notes, is the food — always good, sometimes great, and often innovative.
