Customers are feasting at chef Chance Anies’ bustling, casual Filipino steakhouse in Francisville. The favorites so far seem to be the 1-pound burgers on house-baked Hawaiian buns and the charcoal-grilled chicken marinated in soy, calamansi, lemongrass, annatto, and butter. The biggest hit, however, is likely the bloom shroom — a vegan, onion-free homage to Outback Steakhouse’s bloomin’ onion featuring a crown of crispy, seasoned enoki mushrooms served with a side “salsa rosada” (a mix of banana ketchup and house-made vegan mayo).
