Brooklyn Brewery announces menu, local guest chefs for Three Headed Beast event

Brooklyn Brewery comes to town this Saturday, Oct. 17, for their third annual Brooklyn Mash series, bringing a week’s worth of beer-soaked happenings to Philly with them. And for Brooklyn chef Andrew Gerson, that visit will revolve around the week’s crowning event: Three Headed Beast.

"The idea is to celebrate the cultural growth of the city," Gerson, a Mount Airy native, says. "We are working closely with local artisans and craft brewers that are really making Philly vibrant."

To accomplish that goal, Gerson has enlisted the help of  Amis' Brad Spence and Alex Buckner of Local 215 for the event, as well as Bryan Mayer, formerly of Kensington Quarters, who will provide meat sourcing. Together, the group will cook up three entire animals for a massive, seasonal spread, complete with music and games.

Alla Spina will host the event, which goes down Saturday, Oct. 24 at 1 p.m. Tickets run $35 and are on sale now.

"The concept comes from honoring the whole animal," Gerson says of Three Headed Beast. "It's all about supporting local food systems as much as we can."

Spence, Buckner and Gerson will approach that concept from their own angle, with each preparing a different whole animal for the evening's festivities. The menu is as follows:

  1. Chef Andrew Gerson — Apple cider and fresh ginger-braised pulled goat. Served with a roasted and pickled fall vegetable medley.

  2. Chef Brad Spence — Lamb Bolognese with house made rigatoni, Pecorino Romano, and mint.

  3. Chef Alex Buckner — Pork sausage served with fermented ramps and mostarda.

The event's available beer will rival the menu, with plenty of rare brews on hand, as well as some selections from Brooklyn's Brewmaster's Reserve — a collection of one-off creations from the brewery. Plain Janes, however, will be happy, too, with Gerson bringing some standard, core varieties — like Brooklyn's IPA and lager — along as well.

But despite all the great food and beer lined up for Three Headed Beast, Gerson himself seems most psyched about simply returning home to a city he's watched grow so much, both in terms of its food and its chefs.

"I honed my culinary skills in Philly. It's full of amazingly talented chefs," Gerson says. "We thought this would be a fun way to incorporate a few more and showcase their talent."
