A month after Jennifer Carroll departed, a new chef de cuisine is in place at 10 Arts at the Ritz-Carlton.

And chef Eric Ripert, who oversees the restaurant, did not go far for the selection.

He's Nathan Volz, who started two years ago as sous chef after a career with other Ritz-Carltons, including Battery Park and Laguna Niguel. He's Le Cordon Bleu-trained.

Carroll, weighing her next move, has a guest dinner planned for Nov. 30 with Scott Schroeder of South Philly Tap Room.
