Chef Tyson Wong Ophaso, who left the ill-starred Chew Man Chu to do his own thing, is ready to test Tyson's Bees, his food truck, this weekend.
The dry run will be noon to 4 p.m. Dec. 11 and 12 outside of Sampan (124 S. 13th St.). Ophaso says he will offer only four items: green curry chicken with jasmine rice; pork bun with pickled cucumber and hoisin; short rib taco; and edamame with ginger and lime zest.
All profits will go to charities in Cambodia and Thailand, his homeland. He said he is setting up a foundation.
After Sunday's outing, he will regroup and set the opening date for the truck's new home: at 33d and Spruce Streets outside of Franklin Field. Hours there will be 11 a.m. to 6 p.m., and the menu will be expanded. Ophaso says he hopes to be open there by the end of next week.
