SliCE opening organic pizza shop in Fishtown

Marlo and Jason Dilks are in full prep mode, all right.

Marlo and Jason Dilks are in full prep mode.

They're prepping the fourth SliCE pizzeria, to replace Art of Pizza, which just closed at 431 E. Girard Ave. in Fishtown.

They already have four children (Nadia, 15, Capri, 5, Avana, 4, and Chiara, 3). As the Fishtown SliCE becomes their fifth restaurant, including P'unk Burger on East Passyunk Avenue, the couple plans to announce a deal for a sixth restaurant, just to even things up.

The Fishtown location, which will have a large communal table for 10 to 12 people plus two-tops to seat 8 to 10 people inside and outside, will feature an expanded selection of gluten-free pizza.

Four styles of wings will be available, as well as house-made mozzarella sticks and organic, made-to-order doughnuts with organic speculoos dipping sauce.  Maine Root natural soda will be on the fountain, as it is at P'unk Burger.

This location will look more like P'unk Burger, as Philadelphia Woodcraft Company will combine industrial and natural design through reclaimed woods and raw metals.

It will be open daily from 11 a.m. to 10 p.m., with a special late-night menu and hours on Friday and Saturday.

Other locations - Italian Market, Rittenhouse, and Washington Township, N.J. - will be going the organic route.

Here's a backgrounder by Rick Nichols on SliCE's Trenton-style pizza, weaving in the Dilkses story.
