6 to 8 cups salad greens or mesclun mix
1/4 cup fresh squeezed lemon juice (1 to 2 lemons, depending on size)
1/4 cup good olive oil
1 teaspoon sugar
1/4 teaspoon salt
1/4 teaspoon fresh ground black pepper
1. Place the salad greens in a large bowl.
2. In a liquid measuring cup, whisk together the lemon juice, olive oil, sugar, salt, and pepper. Pour enough dressing on the salad to moisten.
3. Toss and serve immediately.
