David Jansen, chef de cuisine at the Fountain Restaurant at the Four Seasons for 10 years, gave notice today (Tuesday). He said that following the passing of his father, he wanted to take time off to be with his family.
The Downingtown-raised Jansen, 43, a 20-plus-year veteran of the hotel, started in the biz at age 14 helping at the old Tabas Hotel.
He called it bittersweet, saying he's miss his staff. He's worked for several years under hotel chef Rafael Gonzalez.
The Fountain has won just about every star, diamond, and bell in the food community, and has a way of bouncing back after chef departures including such bigger-than-life dudes as Jean-Marie Lacroix, Martin Hamann, and Tony Clark. (By the way, Clark just left the employ of Harry's Savoy in Wilmington.)
