Sylva Senat consulting at Spice 28
Chef Sylva Senat - who went into restaurant consulting after he was relieved of his command at Tashan in June - is now working on Center City's Spice 28 (1228 Chestnut St.).
Chef Sylva Senat - who went into restaurant consulting after he was relieved of his command at Tashan in June - is now working on Center City's Spice 28 (1228 Chestnut St.).
The well-located Chinese restaurant - owned by Jack Chen of Chinatown's Sakura Mandarin - needs some focus, said Senat. He's starting with the so-called Asian fusion section of the menu as well as the wine and cocktail list.
Senat's first post-Tashan job was turning around the kitchen at The Saint James in Ardmore - a gig he left in November.
The Haitian-born, Brooklyn-bred Senat is an alum of Sign of the Dove, Aquavit, and Jean Georges.
Though Spice 28 had been rumored to be on the market, Senat insists that this is a consulting gig.
