Watch Mike Solomonov make lamb shawarma the easy way

The chef shot an episode of "The Chef's Kitchen" and prepared a recipe from his new cookbook.

Shawarma, that Middle Eastern rotisserie dish, is not usually a recipe attempted by home cooks. Not too many people have a spit at their disposal.

But Mike Solomonov of Zahav has a way, which he lays out in his new cookbook, Israeli Soul, the follow-up to his Zahav cookbook, which was both the James Beard Book of the Year and the Best International Cookbook in 2016.

Last month, Solomonov shot an episode of The Chef's Kitchen, hosted by Nicole Gaffney and produced by the Philly-based Hype413. The series is shot at PBS39 in Bethlehem.

Solomonov uses an oven in his home recipe, found in the new cookbook.

He starts with lamb shoulder — also the basis of Zahav's signature dish — and spices it liberally. He cures it overnight, ties it in twine, and roasts for two hours.

After Solomonov cools the roast, he shaves it down with a knife and crisps the pieces in a hot pan. He serves it with lots of condiments — amba, matbucha, and Yemite peppers — on pita.

Gaffney, whom you may remember as a finalist a few years back on Food Network Star, also gets props from Solomonov for pronouncing "tehina" with the proper "chhhh" in the middle, and for saying his name as he does.

For the record, it's SOL-eh-men-ov, with the accent on the first syllable. Or just call him Mike Solo.
