The accolades have come pouring in for Emily Riddell since she pivoted her patisserie from pop-ups and coffee shops to a permanent retail spot on the first floor of the Bok Building in 2022. Though she’s not exactly a newcomer, Food and Wine made space for her on their Best New Chefs list just a few months later: “There are few perfect croissants in the world, yet I found one in Philadelphia at Machine Shop,” beamed critic Khushbu Shah. The New York Times joined in the chorus in 2024, dubbing Machine Shop one of the 22 best bakeries in the country and praising the “delicate canelés, cookies made with three types of ginger, and beautiful lemon tarts capped with torched meringue.”
