For the first time in four years, brother-and-sister co-owners George and Vasiliki Tsiouris have retained the services of a Greek American chef for their Center City taverna Opa (1311 Sansom St.) and its Drury Beer Garden in the back.

For his new menu, Bobby Saritsoglou is turning out house-made pita bread and pastas and house-cured meats, and he has a charcoal grill. Most dishes are of the small-plate variety - including spreads, dakos (barley toast), gyros, salates and lahanika (salads and vegetables), pites (filo pies), macaronia (pasta), as well as trapezi (for the table).  A four-course tasting menu is available for $45 per person with an optional wine pairing for $25 per person.

The Philly-born Saritsoglou's background includes Michelin-starred Varoulko in Athens. Most recently he was at Santucci's in South Philadelphia.
