Under the vaulted roof of the Red Barn Farm and Café in Hammonton, Evelyn Penza bakes an impressive array of sweet and savory crowd-pleasing pies. Just look at what she can do with apples; at press time Penza’s Pies is offering double crust apple, apple crumb, apple cranberry, apple blueberry — there’s even a sugar-free apple option. Further down the menu you’ll find coconut custard, peach, pumpkin ricotta, pineapple ricotta and more. And on the savory side, there’s sweet potato, Sciachiatta (Sicilian meat pie), and a tomato pie that much deeper, cheesier, and crustier than the kind you find in South Philly.
