When Nish Patel took over this Northern Liberties shop in 2020, the first thing worked on was the dough. He wanted firmer pizza and, more importantly, an outstanding cheesesteak roll. After consulting with several experts, including Danny DiGiampietro at Angelo’s, Patel decided to invest heavily in bread. He set about experimenting, along the way buying top-notch equipment and setting up an in-house bakery. Fast-forward to now and Del Rossi’s is known for its bread — a crispy, seeded hybrid of a sourdough baguette and the traditional Philly hoagie roll with a strong “hinge” — and the shop easily makes our list of the city’s best cheesesteak shops.
