Meatless cauliflower stir-fry a pleasant surprise

Sacred Heart students Angel Daniels, Deanna Fooks-Benbow, Bryanna Lester, Tanasha Lopez, and Lyric Samuels bounded down the stairs asking what we were making this week.  When we replied cauliflower fried rice and cucumber salad they asked, "When are we going to have meat again?"  "Where is the rice?"  But the girls got right to work: Bryanna ricing the cauliflower, Angel and Tanasha chopping the veggies, Deanna mincing garlic and ginger, while Lyric assembled the cucumber salad.  They were pleasantly surprised at the finished product.  "I am going to cook this at home for my mom," exclaimed Angel.
