Salad with lemon vinaigrette the surprise favorite

Every week these kids are getting faster, smarter and more independent in the kitchen, proving how much they have learned through this class. They were incredibly surprised how much the chopped mushrooms truly looked like meat in the sauce, one student told the group that her mom said eating too much meat is not good for you so this dish was a good choice. The pasta and salad got rave reviews "Five stars", "two thumbs up", every week we have one or two skeptics but by the time they try the dish they are always sold. Surprisingly more kids were going up to get seconds or thirds on the salad as they loved the sour and tart vinaigrette.
