New chef at M

Dude has Parc, Daniel, and Per Se on his resume.

There's a happy kitchen changeover underway at Restaurant M, which features one of the city's prettiest outdoor-dining spots, at the Morris House Hotel (231 S. Eighth St.).

Pascual Cancelliere, who's been cooking an Argentinean/Italian menu there while awaiting the completion of his own South Philly Argentinean restaurant, is bowing out. Hotel owner Gene Lefevre is helping him finish the restaurant at 943 S. Ninth St., known as 943, which has been in the works for more than a year. (Wow, November 2008.) Cancelliere hopes to open in August.

M's new chef, Michael Caspi, whose resume includes a stint at Parc (as well as time at Daniel and Per Se), will start full time next week (7/26). Cuisine will be "modern, clean, fresh, locally sourced," and the menu will change weekly, explains manager Debbie Lefevre.

Entrees will be priced at $19 to $25, and there will be a bar menu.
