Breaking: Terry White is out of Union Trust

The Chestnut Street steakhouse's founding chef, who developed the project with Ed Doherty and Joe Grasso, has left. Kevin Sbraga, most recently chef de cuisine for Jose Garces, is now in the kitchen.

Something is up at Union Trust, the steakhouse at 717 Chestnut St.

A year and a half after UT was conceived and nearly three months after it opened, Terry White has split from partners Ed Doherty and developer Joe Grasso, according to Doherty. White did not immediately return my call.

Kevin Sbraga, former culinary director of Jose Garces' Restaurant Group, comes on board as chef de cuisine, working with sous chef Quincy Logan, formerly of Capital Grille. Doherty opened Capital Grille in Philadelphia.

Sbraga will lighten up the menu and "adjust the price points to make it very interesting," Doherty says, declining to describe the split. "Terry White truly loves the process of building restaurants, and is excited to go find his next opportunity to do so." White opened restaurants for Del Frisco's, Sullivans and Lone Star.

There must be more than a touch of sentimentality for White in leaving. He worked for Del Frisco's when the chain had an offer to buy the property that is now Union Trust, which means he was probably destined to run a steakhouse at 717 Chestnut. After that deal soured, Del Frisco's found its space at 15th and Chestnut Streets.
